Some diners come to Bronco for tacos and end up wrapping steak and hamburger steak in tortillas, too. Add a little mustard to a salsa-topped taco, or roll meat dishes with salsa in a tortilla: the do-it-yourself style lets you make a meal your own. The menu includes tacos packed with vegetables, burritos of stewed beef wrapped in flour tortillas, and enchiladas, with ground beef rolled in corn tortillas and topped with cheese. For something to nibble on, there are tortilla chips and nachos, as well as chilli beans, a stew of ground beef and beans.

Steak and hamburger steak are the main options for a meat-focused meal. Harami steak and chicken steak come with a choice of rice, bread or tortillas; hamburger steak is also served with rice, bread or tortillas. One diner ordered a 300g hamburger steak and enjoyed the generous portion alongside salad, tacos and chorizo. Hamburger steaks are available in sizes from 200g to 400g, and cheese can be added.

The Mexican salad combines corn, tomato, cucumber, onion and raisins with the restaurant's original dressing. One diner highlighted the sauces served with the salad, chorizo and steak; adding salad between meat dishes could make for a varied spread. Beer and tequila-based cocktails are also on the menu, making Bronco an option for a drink with chorizo or nachos.
